Pepper Stuffed Chicken Breast

Ingredients

  • 1 potato
  • 1/4 white onion
  • 1/4 bell pepper (color of choice)
  • 2 tsp olive oil
  • 1 boneless skinless chicken breast
  • 1/4 tsp cumin
  • 1/4 tsp salt
  • 1/4 tsp black pepper

Instructions

  • Preheat oven to 375F
  • Clean potato, pierce with fork to vent, wrap in tin foil and bake until tender (30-40 m
  • While potato is cooking, finely dice ¼ of a white onion and ¼ of a bell pepper
  • Heat olive oil on medium heat into nonstick pan . Add peppers and onions and cook until tender (5-7 min) . Remove vegetable mixture from heat
  • Butterfly raw chicken breast and add cooked vegetable mix and cheese as desired to inside. Fold chicken breast back over and seal shut with toothpicks
  • Mix garlic powder, cumin, salt, pepper to small separate bowl. Add olive oil until mixture becomes a paste. Rub stuffed chicken breast with spice mixture.
  • Add nonstick pan to medium heat and drizzle lightly with olive oil . Sear chicken breast on both sides until cooked thoroughly (5-7 min both sides
  • When chicken is cooked, remove from pan and serve with baked potato
