Chicken and Pepper Pasta
Peppers and onion pasta topped with a chicken breast

1 medium pot
1 medium nonstick pan
- 1 cup uncooked pasta (type of choice)
- 1/4 whole white onion
- 1/4 whole bell pepper (color of choice)
- salt and pepper (to taste)
- 1 boneless skinless chicken breast
- 2 tsp olive oil
- 2 tsp minced garlic
Fill medium pot with water until boiling. Add and cook pasta according to package instructions
Slice onion and bell peppers into thin strips
Salt and pepper chicken breast generously
Heat medium nonstick pan on medium heat and add a drizzle of olive oil. Once oil is warm, add chicken breast and sear on both sides until cooked through (5-7 min per side).
Remove chicken from pan and add onion and pepper, cooking until soft (3-5 min). Add garlic to pan and cook for another 1-2 min
Once pasta is cooked through, strain and add to pan with vegetables. Toss until coated thoroughly and serve with sliced chicken breast on top.
