Chicken And Pepper Stir Fry

Chicken and vegetables with rice

Equipment

  • medium pot
  • small nonstick pan

Ingredients

  • 1 boneless skinless chicken breast
  • salt and pepper to taste
  • 2 tsp olive oil
  • 1/2 cup white rice
  • 1/2 whole bell pepper color of choice
  • 1/2 whole white onion
  • 1 tbsp minced garlic
  • 3 tbsp soy sauce

Instructions

  • Take boneless, skinless chicken breast, trim fat as desired and salt and pepper generously Heat nonstick pan with olive oil on medium-high. When pan has heated, sear both sides of the chicken breast thoroughly (4-6 min) or until cooked through. Remove from heat and set aside.
  • Fill medium pot with water until boiling. Add and cook rice according to package instructions
  • Dice onion and bell peppers. Remove chicken from pan and add onion and pepper, cooking until soft (3-5 min). Add garlic to pan and cook for another 1-2 min
  • When rice is done cooking, chop up chicken breast into bite sized pieces and add rice and chicken to pan with vegetables.
  • Mix in soy sauce and add additional salt or pepper to taste
