Chicken and Pepper Pasta

A lightly seasoned chicken breast served with sliced vegetables and pasta. 

Chicken and Pepper Pasta

Equipment

  • 1 medium pot
  • 1 medium nonstick pan

Ingredients

  • 1 cup uncooked pasta (type of choice)
  • 1/4 whole white onion
  • 1/4 whole bell pepper (color of choice)
  • salt and pepper (to taste)
  • 1 boneless skinless chicken breast
  • 2 tsp olive oil
  • 2 tsp minced garlic

Instructions

  • Fill medium pot with water until boiling. Add and cook pasta according to package instructions
  • Slice onion and bell peppers into thin strips
  • Salt and pepper chicken breast generously
  • Heat medium nonstick pan on medium heat and add a drizzle of olive oil. Once oil is warm, add chicken breast and sear on both sides until cooked through (5-7 min per side).
  • Remove chicken from pan and add onion and pepper, cooking until soft (3-5 min). Add garlic to pan and cook for another 1-2 min
  • Once pasta is cooked through, strain and add to pan with vegetables. Toss until coated thoroughly and serve with sliced chicken breast on top.
