Chicken and vegetables with rice

- 1 boneless skinless chicken breast
- salt and pepper to taste
- 2 tsp olive oil
- 1/2 cup white rice
- 1/2 whole bell pepper color of choice
- 1/2 whole white onion
- 1 tbsp minced garlic
- 3 tbsp soy sauce
Take boneless, skinless chicken breast, trim fat as desired and salt and pepper generously
Heat nonstick pan with olive oil on medium-high. When pan has heated, sear both sides of the chicken breast thoroughly (4-6 min) or until cooked through. Remove from heat and set aside.
Fill medium pot with water until boiling. Add and cook rice according to package instructions
Dice onion and bell peppers. Remove chicken from pan and add onion and pepper, cooking until soft (3-5 min). Add garlic to pan and cook for another 1-2 min
When rice is done cooking, chop up chicken breast into bite sized pieces and add rice and chicken to pan with vegetables.
Mix in soy sauce and add additional salt or pepper to taste
