Dice ¼ of a white onion finely
Add to small pot on medium with 1 tsp olive oil. Cook until translucent (3-5 min)
. Salt and pepper onions to taste
Add 1 tsp minced garlic and cook on medium low (1-2 min) or until fragrant
Add 2 cups of water and 2 tsp chicken bouillon to pot with onions and garlic
Add ½ can of diced tomatoes to pot . Stir broth and simmer on low
While broth is cooking, mix 1/4 tsp cumin, ¼ tsp garlic powder, and salt and pepper to taste in small separate bowl
Add olive oil to spice mixture until a paste forms. Rub chicken breast with spice mixture
Set nonstick pan to medium heat and drizzle lightly with olive oil . Sear chicken breast on both sides until cooked thoroughly (5-7 min both sides)
When chicken is cooked, remove from pan and chop into bite-sized pieces
Stir chopped chicken into broth, cooking for another 3—5 min
Serve with shredded cheddar cheese on top as desired
